🍳 Sweet Potato Frittata 🍳
We recently got a new-mini-cast iron pan, so we decided to give it a go by cooking a frittata dish. It was our first time making a frittata, but came out so delicious and wonderful. Our featured ingredient was LOTS of Korean sweet potatoes ("goguma" 고구마). Pair it up with some hot sauce + ketchup for that extra oooomf.
🔥 깍두기 🔥 Spicy Daikon Radish 🔥
Unfortunately, we can't easily get good batches of Korean Kimchi or Spicy Daikon Radish near us, so our solution? Make it ourselves. We chop, add, and mix in all the ingredients and let it sit / ferment on the counter for a few days, and viola! Best with a bowl of ramen (and so many other things) #YUM #RedderTheBetter
🦃 Open-faced Turkey Sandwich 🦃
A quick dish I like to put together for brunch. All it takes is some hard-boiled eggs, red onions, peppers, turkey, mayonnaise and a sprinkle of hot sauce + ketchup (again, gotta have a bit of both) alllll on-top of a butter-toasted-cheese-melted-sourdough bread. Add some arugula or spinach if you want to throw in some greens too!
🍆 Eggplant Parm🍆
What's better than a Chicken Parm? Eggplant Parm. Our tip/reminder: cook the eggplant long enough so that it's tender, while maintaining the crispiness (without burning it) of the breading outside. Aaaaand, make sure you layer lots of sauce and cheese in between the pasta and the eggplant of course. Finally, top it off with some more cheese and basil.
Grilled Cauliflower Head
Drenched in butter, parsley, garlic, basil, and lemon zest! Topped with lots of cheese.
Cauliflower Steaks (Curry and Paprika-Cayenne)
One of our favorite "steaks" is made with a whole head of cauliflowers. We dress 'em with spices, and roast them for awhile, cooking to perfection. Our go-to-spices are cumin, coriander, turmeric, graham masala, paprika, cayenne, and of course some salt + pepper.
